Brumas de Ayosa Blanco is the first commercial vermouth reference from Bodega Comarcal Valle de Güímar within the **Vermut de Tenerife** project driven by the island council — a collective bet to recover Canarian aperitivo tradition with Atlantic identity and local botany. Artisan-made in Arafo — a municipality in southeast Tenerife from which the valley that gives the winery its name is visible — it starts from carefully selected white wines with a **Listán Blanco** base grown in high-altitude vineyards and volcanic soils of the Valle de Güímar D.O. Its distinctive trait is slow maceration with **Artemisia canariensis**, Tenerife incense, an endemic plant known for its intense aroma and digestive properties, together with select botanicals such as cardamom, star anise, cinnamon and vanilla after a long infusion. The result is an Atlantic vermouth, fresh and deeply Canarian, balancing vermouth tradition and island modernity without resorting to industrial formulations. The cooperative winery, with capacity of one million litres and almost two hundred partner growers in Arafo, Candelaria and Güímar, brings cooperative scale and technical rigour to an author product.
Nose and palate
In the glass it shows golden brilliance with greenish reflections that anticipate freshness and aromatic complexity. The nose unfolds an intense herbal and floral fragrance: Canarian incense in the foreground, accompanied by candied citrus, wild honey, clove, cinnamon and memories of white flowers — pansies and lilies in the official council shop tasting. It is an Atlantic and spiced profile, without alcoholic aggression, with layers that invite resting the glass. On the palate it is harmonious and persistent, with a delicate bitterness that balances natural semidry sweetness; the texture is unctuous, fresh and ample, far from diluted or excessively sugary white vermouths. The finish is refreshing, aromatic and elegant, with a balsamic echo of Canarian incense that invites another sip. At fifteen degrees alcohol it has enough body for aperitivo alone or in light combinations, maintaining the volcanic expression of Listán and the herbal verticality of Artemisia canariensis.
