Overall impression

Vermutpedia is re-evaluating the Italian catalogue; the Vermutpedia Score for this entry remains pending until the new tasting round is complete. Gancia Vermouth Extra Dry completes Canelli's historic trilogy — alongside Rosso and 1934 Bianco — as the house's dry white, made with aromatised white wine, very low sugar content and persistent bitter aftertaste. At 18% vol. in 1 litre bottle, it is the Italian classic for Dry Martini and dry Negroni when seeking fine, dry profile with alcoholic presence without residual sweetness. Fratelli Gancia house, founded in 1850, applies its three-phase method — delicate wine, herbal extracts in alcohols of about 30° and final blend — to obtain a vermouth delicate and intense at once. Pale straw colour. For Vermutpedia, Gancia Extra Dry represents high-consumption Piedmont dry vermouth: accessible, consistent and oriented to classic mixology, with Canelli heritage and «third pillar» function in the range alongside rosso and bianco.

Nose and palate

On the nose, Gancia Extra Dry is delicate but intense: aromatic herbs, dry citrus and wormwood over young white wine, with sobriety defining Italian extra dry style. Pale straw colour, clean. On the palate it is dry, fine and with pleasant, prolonged bitterness at the end — the persistent bitter aftertaste the house highlights as product hallmark. Very little sweetness, light texture and alcoholic trace coherent with 18% vol. Herbaceous and spiced notes appear with discretion, without Gancia Bianco's roundness. Compared with French dry such as Dolin Dry, Italian Extra Dry is more direct and slightly more piercing; against generic industrial dry, it maintains fineness and noble bitterness. Medium-long persistence with dry finish that prepares the palate for another cocktail. A Gancia extra dry for Martini, dry spritz and aperitifs where bitterness must dominate over sweetness.

How to serve it

Gancia conceives Extra Dry for Dry Martini — classic 2:1 or 6:1 proportions to taste — and for solo service with ice or in dry spritz with minimal soda. At 6–8 °C in cocktail glass or small tumbler; olive or lemon twist according to style. In Dry Negroni or Bijou sec it brings herbal layer without sweetness. The litre format makes it practical for domestic bar and high-volume restaurants. Not sweet aperitif vermouth: its charm lies in dryness and final bitterness. Pairs with olives, salty snacks and light pre-meal appetisers. For Vermutpedia, Gancia Extra Dry is the litre reference for classic Italian Martini and dry mixology, with 18% vol. and bitter aftertaste distinguishing this line from sweet Bianco and Di Torino Rosso within the same Canelli house.

Production context

Fratelli Gancia makes Vermouth Extra Dry in Canelli (Piedmont) with the specialities range's three-phase process: selection of delicate white wine, extraction of herbs and spices in alcoholic liquid of approximately 30° and blend with fortified wine, minimum sugar, filtration and tank rest before bottling. 18% vol., 100 cl. Completes the Rosso, Bianco and Extra Dry trilogy structuring the house's vermouth offer since the nineteenth century. Contains sulphites. For Vermutpedia, Gancia Extra Dry synthesises mass-market Piedmont dry vermouth: aromatised white wine, very little sugar, persistent bitterness, 18% vol. and Gancia method documented at gancia.it, designed for Dry Martini and classic mixology keeping Italian aperitif alive.
