Overall impression

Noilly Prat Extra Dry is the extra-dry version from the Marseillan house, formulated specifically for the 50:50 Martini with a more austere and precise profile than the Original Dry from the same winery. The brand makes it with sixteen herbs and spices from around the world — less complex than the Original, which uses a broader selection — among which chamomile, coriander from Morocco, bitter oranges from Tunisia and iris root from Italy stand out. Relaunched in 2012 after a period of discontinuity in North America, it recovers its place as the second white modality in the four-vermouth Marseillan range — alongside Original Dry, Rouge and Ambré. At 18% vol. and with the ex-Cognac and ex-whisky barrel ageing that defines Noilly Prat, it offers a dry, clean and precise vermouth designed for classic cocktails where gin-vermouth balance is the goal.

Nose and palate

The organoleptic profile of Extra Dry is more austere than that of the house Original Dry. On the nose emerge notes of chamomile with Moroccan coriander, Tunisian bitter orange and Italian iris root in a dry, clean ensemble. Colour is pale, almost colourless, typical of the French extra-dry style. On the palate the profile is dry, precise and with contained bitterness: chamomile brings a saline-herbal nuance, coriander and bitter orange add spice and citrus without sweetness, and iris closes with a subtle floral background. Texture is light compared with longer-aged vermouths, although passage through ex-Cognac and ex-whisky barrels adds minimal roundness that distinguishes it from industrial extra dry without ageing. It does not seek the opulence of the Original, but the aromatic neutrality and precision that a balanced Dry Martini demands.

How to serve it

Noilly Prat recommends Extra Dry for preparing a Martini Cocktail 50:50 — half gin, half vermouth — where its dry, clean profile allows both ingredients to dialogue on equal footing. Also works on its own, very cold, as an austere aperitif before dinner, or in Dry Martini variants with more extreme proportions toward gin. Its less complex character than the Original makes it ideal when a vermouth is sought that brings freshness and precision without dominating the spirit. In the Noilly Prat range, Extra Dry complements Original Dry — more herbaceous and complex — Rouge and Ambré, covering the dry-extra dry spectrum for classic cocktailery.

Production context

Noilly Prat makes its vermouths in Marseillan, in the French Languedoc, since 1813. Extra Dry is part of the four-vermouth range the house produces with the distinctive ageing process in ex-Cognac and ex-whisky oak barrels outdoors, exposed to Mediterranean sun and wind. Sixteen botanicals — chamomile, coriander, bitter orange, iris and others — are infused according to the Extra Dry-specific recipe, less broad than that of the Original.
