Sulphites
Sulphites are compounds used to protect wine and vermouth against oxidation and microbial spoilage. They also appear naturally during fermentation.
Their presence must be declared on the label when it exceeds the applicable legal threshold. “Contains sulphites” does not by itself indicate a high amount or distinguish artisan from industrial production.
Once the bottle is open, sulphites do not indefinitely prevent aromatic loss. Follow the guidelines to store vermouth and limit heat, light and oxygen.
