Fortified

A fortified wine is one to which grape spirit is added to raise its strength. Vermouth usually belongs to the broader category of fortified aromatised wines.

Fortification improves stability and creates a base able to carry sugar and intense botanical flavours. The technical act of adding alcohol is called encabezado.

Not every fortified wine is vermouth: sherry, port and others follow their own rules and processes. In what vermouth is it is explained why aromatisation, especially with wormwood, is decisive.
