Fortification (encabezado)

Encabezado is the addition of grape spirit to a wine to raise its strength and stability. It is a common technique in fortified and aromatised wines.

It may take place before or after botanical extracts are added, according to the producer’s method. Alcohol favours stability and conservation, and also influences body and extraction.

A fortified wine is fortified, but vermouth also needs aromatisation and sweetness adjustment. The general explanation of what vermouth is places this stage within the process.
