Base wine
Base wine is the wine on which vermouth is built before botanicals, sugar and, where appropriate, grape spirit are added.
Its grape variety, acidity, alcohol and aromatic profile condition the final result. A neutral base lets the botanicals speak; one with personality brings fruit, salinity or ageing notes.
It must represent the majority share of the product under aromatised-wine rules. It is the element that separates vermouth from many bitters and amaros.
