Botanical

In vermouth, a botanical is any plant, root, bark, flower, seed or fruit used to contribute aroma, flavour or bitterness.

Wormwood is the defining botanical, but it is usually joined by gentian, cinchona, cinnamon, clove or citrus peels. Each house protects the combination and proportions of its recipe.

Botanicals are extracted by maceration, infusion or combined techniques before being integrated into the wine. They are decisive for understanding what vermouth is.
