Wormwood is the essential bitter plant of vermouth and the one that historically gives it its name. It contributes a dry, herbal and lingering bitterness.
Species of the genus Artemisia, especially Artemisia absinthium, form the aromatic backbone of many recipes. Its dose is balanced with spices, roots and citrus so that it does not dominate the whole.
Its presence helps distinguish what vermouth is from other aromatised wines. It can be perceived in both a rosso and a dry, even when sugar and the rest of the botanicals change.
