Cinchona
Cinchona is the bark of trees of the genus Cinchona, rich in quinine and dry in bitterness. It is used to aromatise quinados, quinquinas and chinatos.
Cinchona bark contributes a tonic bitterness, distinct from the earthy profile of gentian or the herbal one of wormwood. Historically it was linked to restorative drinks.
