Quinado
A quinado is a wine aromatised with cinchona, traditionally balanced with sugar and other botanicals. Its main trait is the bitterness of quinine.
Cinchona may be joined by citrus, spices and herbs to soften its dryness. Many historic labels associated these wines with tonic properties that today should not be read as medical claims.
The Spanish use of “quinado” overlaps with, but does not always equal, quinquina or chinato. Their nuances are in quinados, quinquinas and chinatos.
