Gentian is a root of clean, earthy and very persistent bitterness, common in aperitifs, bitters and some vermouths.
Gentian root contains extremely bitter compounds, so it is dosed with precision. It adds depth without exactly reproducing the herbal profile of wormwood.
It is characteristic of many Americanos and amaros, and can coexist with cinchona. Its role helps explain the boundary between vermouth and bitter.
