Mistela

Mistela is grape must whose fermentation is prevented or stopped by adding alcohol. It retains abundant natural sugar and fruity flavour.

It can add sweetness and volume to certain blends, but it is not synonymous with vermouth. It lacks the botanical aromatisation and bitter balance that characterise the latter.

Compared with a fermented base wine, mistela keeps more of the grape’s own sugars. Its addition of alcohol brings it technically close to encabezado, though it pursues a different result.
