Overall impression

Vermutpedia is re-evaluating the Italian catalogue; this entry's Vermutpedia Score remains pending until the new tasting round is complete. Paradiso closes the 9diDANTE trilogy inspired by the Divina Commedia: a superiore rosé vermouth with 12% Nebbiolo DOC and 88% Cortese DOC, onion-skin colour according to 9didante.com. The third stage of the Dantesque journey after Inferno and Purgatorio; an original recipe that expands the aperitivo concept. Alex Ouziel and Mario Baralis — former guardian of the Carpano and Antica formulas — place Piedmontese DOC wines at the heart of every bottle.

Nose and palate

Onion-skin rosé in the glass. Grapefruit, raspberry, star anise — traditional Nebbiolo notes — mandarin, rosemary and cocoa. Fruit and herbs balanced on the palate with a fresh finish; twenty-seven botanicals shared with the rest of the 9diDANTE range.

How to serve it

On ice with a grapefruit twist, as the house recommends, or in a spritz and author cocktails with agave spirits — pairings suggested by 9diDANTE. Designed to spark creativity in bartending beyond the classic aperitivo.

Production context

18% vol., 75 cl. Vermouth di Torino Superiore IGP, made in Alba according to 9didante.com. Full range: Inferno Rosso, Purgatorio Extra Dry and Paradiso Rosé. Twenty-seven botanicals across all references; IGP since 2019. Once opened, kept refrigerated it maintains flavour and colour for more than six months according to the official FAQs.
