Overall impression

Be Vermut —also marketed as Be vermut on the winery website— is the artisan vermouth from Bodegas Sel D'Aiz in Castillo Pedroso (Corvera de Toranzo, Cantabria), the fruit of over ten years' work by Asier and Miriam. Per seldaiz.com, base of Oloroso Seco aged more than fifteen years, Pedro Ximénez and grape must, with no added sugar; maceration of up to twenty botanicals — herbs from their own vineyard and roots and flowers from the Toranzo Valley — in French oak. Iodine amber with mahogany hints; the winery describes an intense nose (wormwood, gentian, light curry, balsamic, chocolate, citrus, nutmeg, clove and liquorice) and an elegant palate, lighter than expected, with a long, hazelnut, reasonably dry finish. Limited production (~2,000 bottles in the official shop; up to ~3,000 in distribution). 15% vol., 70 cl.

In a wide glass with ice and orange peel; pairs with all kinds of tapas and Cantabrian aperitivos.
