Laurent Cazottes Bitter Vermouth (Villeneuve-sur-Vère, Tarn) is a «natural» vermouth with low sugar: only 35 g/l for a dry impression and strong aromatic character. Fortified estate organic wine, conceived as a cocktail creature and also for straight service on the rocks. At 17% vol. in a 75 cl bottle, with gentian from Aubrac, quinine, cinnamon, liquorice, savory, caraway, sage, tonka beans and more botanicals, it undergoes twenty-four months of élevage in old barrels exposed to the open air and the Gaillac climate. Biodynamic agriculture since 2010 on the Cazottes domaine. For Vermutpedia, it represents artisanal French bitter vermouth from the south-west: dry, intensely aromatic and built for serious mixology.

Nose and palate

The robe is brilliant with violine reflections, like Japanese maple foliage. The nose is an aromatic inventory: citrus, flowers (candied rose, verbena, savory), spices (cinnamon, liquorice, tonka, ginger) and roots (gentian, quinine). On the palate, fresh attack, bitter structure and a long finish that contracts under clove. The 35 g/l sugar keeps sweetness in check while allowing the botanical tapestry to speak with clarity — closer to a cocktail bitter than to a commercial semisweet red. Twenty-four months in weathered barrels outdoors adds subtle oxidative depth without masking the herbal-citrus core.

How to serve it
