Carpano Dry
Overall impression
Carpano Dry is the new benchmark of Italian dry vermouth at Casa Carpano, made by Fratelli Branca Distillerie in Turin. Born from an ancient recipe enriched by Branca experience in selecting and treating raw materials, with input from sommelier Luca Gardini, world champion. The driest vermouth in the Carpano range, with sugar content lower than other typologies, designed for Martini, Gibson and high mixology where vermouth does not dominate but adds complexity. 18% vol., 75 cl. The modern Italian dry reference: pure luminous platinum colour, balance between centuries-old tradition and botanical innovation.
Nose and palate
Pure platinum colour, vivid and luminous. Exceptional aromatic richness, balanced and structured without aggression: candied fruit, spice, coriander, incense and lemon essential oil. On the palate the wine part of the vermouth is perceived, acidulated, opening into a balsamic fresh note very persistent in aftertaste: citrus and green apple. Italian mountain assenzio and Cretan dittany bring salinity and contained bitterness. Dry texture, firm structure, long clean finish. Compared with Carpano Bianco — 14.9% vol., semisweet, perfumed — Dry is drier, herbaceous and cocktail-oriented.
How to serve it
Designed to serve very cold in classic Martini or Gibson — format that highlights Cretan dittany salinity and extra dry profile. Also neat with lemon twist, Champagne Dry or in mixed drinks where vermouth adds structure without sweetness. In a well-chilled cocktail glass; shaken or stirred according to recipe. Pairs with green olives, pickles and dry aperitifs. 75 cl format, 18% vol.
Production context
Fratelli Branca Distillerie makes Carpano Dry in Turin: selected Italian wines, refining and standardisation phase, maceration with assenzio cultivated in uncontaminated Italian mountain zones and Cretan dittany as distinctive ingredient. 18% vol.; sugar content lower than the rest of the Carpano range. Developed with Luca Gardini's contribution; launched in 2014. Line alongside Bianco, Rosso Classico, Antica Formula and Punt e Mes. Production under rigorous Branca quality controls; marketed at carpano.com. Contains sulphites.
