Overall impression
Dolin Dry is the dry expression of Vermouth de Chambéry, France's only specific vermouth denomination (A.O.C. since 1932). Dolin, founded in 1821 in Savoie, is today one of the few independent producers maintaining the alpine tradition against the large international houses. The Dry defines "French vermouth": lighter, floral and less pungent than Italian reds.
Nose and palate
Alpine meadow botanics over Chambéry — the house mentions more than thirty plants, flowers and spices in maceration in white wine, without publishing the full recipe. Fine herbal, citrus profile with soft gentian; very little sweetness, delicate texture. Freshness and purity that make it a classic cocktail favourite.
How to serve it
Dry Martini at 2:1 or 1:1 ratio, Bamboo, or with soda as an alpine aperitivo. It is the dry vermouth reference when elegance is sought without the weight of a red.
Production context
Joseph Chavasse started the distillery in Chambéry; the Dolin brand dates to 1843. Maceration of alpine plants in Savoie white wine. 17.5% vol., 75 cl. The range also includes Rouge and Blanc de Chambéry; family artisan production in the French Alps.
