Overall impression

Comoz Vermouth Blanc is the historic white vermouth of Chambéry, relaunched by Dolin and Haus Alpenz from Jean-Pierre Comoz's original recipe — alpenz.com. Established in 1856, Comoz was the second vermouth maker in Chambéry after Dolin — where Jean-Pierre had previously worked — and the first to produce in crystal style. Introduced in 1881 under Claudius Comoz, Blanc expressed the selection of wines, plants and fruits from the hills above Chambéry. Acclaimed as the inventor of blanc vermouth. 16% vol., 75 cl. For Vermutpedia, it represents the less sweet, more herbal Chambéry blanc with cherry and wormwood: the vermouth specified in the El Presidente cocktail in Cuba, published in the 1915 Manual del Cantinero.

Nose and palate

On the nose, Comoz Blanc unfolds pine, earth, light fruit, cherry, orange curaçao, alpine flowers and an underground current of wormwood — alpenz.com. Less sweet than Dolin Blanc, more herbal with moderate wormwood bitterness. On the palate it is sweet and full-bodied, with pronounced wormwood and notes of stone fruit, alpine flowers and deep, resonant silk worm. The profile pairs with whiskey better than any other pale white vermouth — according to Haus Alpenz. Ample texture, round passage, persistent herbal-cherry finish. Compared with Dolin Blanc — classic Chambéry style, sweeter — Comoz is less sweet, more wormwood and cherry. Against Carpano Bianco — Italian, cocoa, almond — Comoz is alpine, herbal and French in register. A blanc for palates seeking historic Chambéry vermouth with cherry, alpine flowers and wormwood, coherent with Claudius Comoz legend and his advertising posters.

How to serve it

Comoz Blanc is intended to be served with ice and twist — classic Chambéry aperitivo that highlights cherry, alpine flowers and wormwood. Also in El Presidente — light rum, Comoz Blanc, orange curaçao, grenadine, coupe with orange peel — Savoie Spritz, Blanc Martinez or combinations with gin, vodka or blanco tequila — alpenz.com. Works in Reunited —rye, Comoz Blanc, Aperitivo Cappelletti, Angostura— or Day Drinker when herbal blanc with whiskey is sought. In cocktail glass or highball with moderate ice. Pairs with olives, mountain cheeses and alpine appetisers. For tasting, a Nick & Nora glass without ice allows appreciation of cherry and wormwood layers. It does not compete with sweet Italian whites: it is historic Chambéry style. 75 cl format, 16% vol. For Vermutpedia, Comoz Blanc is the historic blanc reference: El Presidente, ice, twist and profile documented at alpenz.com/product-comoz_blanc.html.

Production context

Dolin et Cie makes Comoz Blanc in Chambéry (Savoie) according to the original recipe preserved after Comoz closed in 1981 — alpenz.com. Chambéry wine base, maceration of real plants — cherry, orange curaçao, alpine flowers, wormwood — bottled in 75 cl. 16% vol.; semisweet profile. Comoz house 1856–1981; four generations until Noël Comoz, president of the Vermouthiers Union in the 1930s. Production relaunched by Haus Alpenz and Dolin; original recipe of Jean-Pierre Comoz. Contains sulphites. For Vermutpedia, Comoz Blanc synthesises historic Chambéry blanc vermouth: inventor of crystal style 1881, El Presidente, 16% vol. and vermouth heritage documented at alpenz.com. The blanc Claudius Comoz promoted with legendary posters, today revived by Dolin with the same artisan vocation of Vermouth de Chambéry A.O.
