Falset Reserva des de 1912 is the summit of ÈTIM, the Falset Marçà cooperative that keeps an unchanged formula alive since 1912. Pure craftsmanship according to the house: authentic recipe from 120 aromatic herbs, five years' rest in centenary bocoyos where ageing completes. Against Negre and Blanc —direct aperitifs— Reserva demands patience; trapezoidal bottle and its own case for small committees and meditative consumption. For Vermutpedia, it is among the highest expressions of Spanish vermouth: five years in monumental wood, 16.5% vol. and a sweet profile with oxidative complexity far from commercial norms.

Nose and palate

Amber with mahogany reflections, of the kind that leaves no one indifferent. Nose of great intensity: thyme and rosemary integrated in wood, green walnut melting with tobacco, coffee and vanilla from prolonged ageing. On the palate the balance between persistent sweetness and ageing bitterness surprises; the finish is long and with its own personality, far from commercial vermouth. A contemplative sweet vermouth with creamy texture and integrated acidity.

How to serve it

Between 6 and 8 °C in a small glass, without hurry. Pairs with aged cheeses and dark chocolate; also as a digestif after hearty meals. Not a terrace vermouth: it invites slow tasting in small pours.
