Overall impression

Falset Negre des de 1912 recovers by chance the original 1912 formula, lost in the 1960s: centenary vermouth from Cooperativa Falset Marçà (Montsant). It is made with red wine from Garnacha negra and Cariñena — which alone makes it special — infused with 120 herbs macerated more than one year in 500-litre oak bocoyos. Sweetness with sugar, not caramel; nearly three years' rest in 225-litre barrels. For Vermutpedia, it is one of Spain's most distinctive sweet reds: real red wine base, no caramel colouring and long barrel ageing in a cooperative with uninterrupted vermouth tradition since 1912.

Nose and palate

Intense garnet colour. Aromas of red wine mixed with Mediterranean herbs from the infusion; tobacco leaf notes and wood hints in the background. Very balanced: a touch of sweetness appears after the soft astringency of the black wine. Sweet profile with around 110 g/L residual sugar according to the cooperative technical sheet — tannic structure from Garnacha and Cariñena integrated with herbal bitterness and barrel depth.

How to serve it

Between 15 and 18 °C, with one or two ice cubes, a little soda and an orange slice; also solo, well chilled, to appreciate all the aromas. Pairs with arbequina olives —anchovy-stuffed—, crisps, cockles, mussels or razor clams, ibérico ham, croquettes and salted tapas — the cooperative's recommended Falset aperitif pairing.
