Overall impression

Vermut La Villa Rojo Tradicional is the premium vermouth from La Tomata Origen in El Escorial (Madrid): it starts from a Pedro Ximénez wine obtained by natural raisining, then Albillo and Moscatel are added. Fifteen days’ maceration with a balanced botanical selection — strawberry tree, juniper, coriander, cinnamon, vanilla, gentian and lily — and three months’ ageing in oak barrel. According to the producer’s sheet, it is very aromatic, creamy and mineral on tasting, with low persistence, good finish and sweet-bitter balance; the sip suggests citrus peel (grapefruit), wormwood and raisins, with a powerful, balanced, dense mouthfeel. High-quality raw materials; organic and vegan according to the winery, though not yet officially certified.

Nose and palate

Mahogany with an iodine rim, clean and bright. The nose is greedy and very expressive: sun-dried PX brings confit raisins and grapefruit peel; on that sweet bed emerge Madrid scrub strawberry tree and juniper, coriander, clove, cinnamon and vanilla, with an unexpected cola-candy halo that recalls old pharmacy vermouths without tasting artificial. Gentian, lily and wormwood close the herbal-balsamic arc. On the palate it is dense, creamy and glyceric —as the house describes—, with generous sweetness refreshed by medium acidity and a fine, integrated bitterness that prolongs the sip. Three months in barrel add mineral roundness and a silky texture; alcohol is well stitched in. Long, honeyed finish with bitter citrus and dried-fruit aftertaste. Coherent with Verema tastings (8.4–8.5) and Peñín’s 91 points. Vermutpedia Score **9.3**: a Madrid vermouth benchmark —powerful, balanced, with scrub and raisin soul— that raises the bar for peninsular artisan reds.

How to serve it

Aperitivo with all kinds of tapas; very cold (6–10 °C) or on ice. Fits the brand’s «#DulceVida» philosophy and Vermut Club in El Escorial.

La Tomata Origen (Calleja del Tamajón s/n, El Escorial). Aromatised wine under EU Regulation No 251/2014. 15% vol., pH 3.8, 75 cl. Only declared allergen: sulphites (free SO₂ ~5 mg/l); no gluten, egg or fish gelatine. Store cool and away from light; no expiry date. Rated 91 points by Peñín according to the guide; awarded in Madrid hospitality competitions according to the winery dossier.
