Vermouth Valdespino
Overall impression
Valdespino Vermouth belongs to the Valdespino Aperitifs range, launched by Grupo José Estévez to recover old recipes, historic labels and, above all, aged wines from the winery's most exclusive oloroso soleras. The vermouth is made from a blend of Oloroso and Moscatel from Valdespino soleras, which brings an elegant citrus note; after hydroalcoholic maceration with bitter extracts of artemisia, coriander, elderflower, gentian and quassia, alongside chamomile flower, aromatic clove, cinnamon, dried Andalusian orange and juniper berries, the final blend rests in barrels that previously held house olorosos. The result, per the winery, delicately balances bitterness of aged Oloroso with Moscatel sweetness: elegant bitterness, spice, light sweetness and citrus notes that define its own identity. Valdespino traces vermouth tradition to the nineteenth century and consolidated it in the 1920s and 1930s; now it renews with art déco labels inspired by the historic catalogue. For Vermutpedia, it is high-expression Jerez vermouth, designed for aperitivo with dried fruit, olives, pickles and fish preserves.

How to serve it
Valdespino recommends serving in a lowball glass with ice and a slice of any citrus, format that enhances Andalusian orange notes and bitter-sweet balance. Pairs, per the winery, with aperitivos such as dried fruit, olives, pickles and fish preserves — anchovies, mussels — in Andalusian and Jerez tapeo line. Very cold temperature, between 6 and 8 °C; also works in Americano or Negroni when greater oxidative depth is wanted. For slow tasting, cocktail glass without ice allows appreciation of oloroso and moscatel integration. Not fast-terrace vermouth: it invites aperitivo with preserves and conversation, in the Spanish social vermú tradition Valdespino evokes in its historic narrative. Ideal with boquerones, gildas and moderately aged cheeses.
Production context
Valdespino Aperitifs grows from the Jerez winery's centenary legacy — documented since 1430, member of the Real Orden de Proveedores since 1883 — integrated into Grupo José Estévez since 1999. Valdespino Vermouth is part of a range alongside Valdespino Quina, both with labels inspired by the historic catalogue (including the over-a-hundred-year-old Tónico para Enfermos). Production: blend of Oloroso and Moscatel from own soleras, hydroalcoholic maceration with artemisia, coriander, elderflower, gentian, quassia, chamomile, clove, cinnamon, Andalusian orange and juniper; final ageing in oloroso barrels. 15% vol., 75 cl.
