Gran Canalla is the author vermouth of Luis Díaz Nájera, a vermouth maker with about six years in the craft according to Seis Grados (2026): after travels through Spain and Italy, he created the brand to complement the flavours of his seafood restaurant Muelle Canalla (Zamora 172, Condesa, Mexico City), where the venue presents it as house vermouth. How to serve it
Cold aperitif, neat or with ice, in the line of Mexican restaurant and bar vermuteo; at Baldío it is poured by the glass (60 ml) in the vermouth section. Pairs with seafood and tapas at Muelle Canalla and with classic cocktails (Negroni, Americano) when a Mexican red with body is sought. Typical serving temperature 6–10 °C.
