Vermut Ruiz Torres is the traditional red vermouth — and sole documented vermouth reference — of Bodegas Ruiz Torres in Cañamero (Cáceres), a family winery since 1870 in the Sierra de Guadalupe / Villuercas-Ibores-Jara Geopark, about 10 km from the Royal Monastery of Guadalupe. According to the official sheet, it is made on Tempranillo red wine cold-macerated with herbs and plants (75 cl, 15% vol., ~€9 in the online shop). The house states that what sets it apart is maceration with rockrose flower (flor de jara, *Cistus*), an autochthonous herb of Extremaduran Mediterranean scrub — the plant that gives its name to the Jara district of the geopark. That detail does not yet appear on the public product page, but it is coherent with Cañamero's botanical setting and with documented use of rockrose in other Extremaduran vermouths (e.g. Castúo's Jaramagos). The winery also makes DOP Ribera del Guadiana, IGP Tierras de Extremadura and DOP Cava wines. For Vermutpedia, it is Cañamero's artisan vermouth: Tempranillo on slate at ~800 m, cold maceration and a territorial rockrose-flower signature per winery communication.

How to serve it
Very cold, with ice, orange or lemon slice and, if preferred, an olive — the winery's proposal in its aperitif gift sets. Neat as an Extremaduran afternoon vermouth; also a simple base for classic cocktails. Pairs with aperitivos, nuts and cheese according to authorised distributors.
