Velay Histórico is the vintage vermouth of Bodegas Muelas (Tordesillas, Valladolid): a one-off bottle made with 100% Tempranillo from the 2008 harvest of La Almendrera vineyard, five years in American and French oak barrels before maceration with the house's own formula of 25 botanicals. The bodega presents it as «a vermouth unlike any you have tasted», intended both for serious aperitif and gastronomic pairing.

Nose and palate

Long barrel ageing adds evolved complexity: spiced notes, integrated botanicals and greater body than standard Velay. On the palate the Tempranillo from a warm vintage (2008) leaves its mark in texture and depth; the sweet-bitter balance is oriented towards the table rather than a quick house pour.

How to serve it

Around 10 °C, as the bodega recommends. Pairs with Iberian charcuterie, salted fish, grilled lamb, game stews or spiced dishes; also with sweet-and-sour or Asian cuisine where vermouth adds spice and controlled sweetness.
