Verminio Carral is the sole vermouth reference from Productos Carral, a family company in Santa María del Monte del Condado (León) with 57 years of apple orchards and more than three decades making natural artisan cider. Herminio Carral Castro, agricultural engineer and pioneer of Leonese cider since 1988, conceived this cider vermouth during the pandemic as a natural evolution of the range: cider, must, vinegar and, for the past four years, Verminio. The drink starts from natural Carral cider made with Reineta apples from the family's own orchards, macerated one hundred days with aromatic herbs, fortified with food-grade alcohol to 15% vol. and rested six months in barrel before bottling. It sits outside the classic wine profile, carries the Sabor Castilla y León seal and recovers the cider tradition of the León mountains — documented since the 12th century — in aperitivo format. Available in 75 and 25 cl, it represents genuine km0: from apple tree to glass without intermediaries, with the authenticity the Carral family defends from their workshop at La Fuente, 13.

Nose and palate

Bright rosé colour, unusual in the vermouth universe and faithful to the cider origin. On the nose, Reineta apple citrus dominates — fresh and direct, without artifice or layers of wine ageing. On the palate, acidity from herbs such as wormwood and gentian balances with the soft sweetness of star anise and chamomile, generating round freshness with its own personality. Medium passage, somewhat lighter texture than wine vermouth but enough body thanks to artisan caramelised sugar and barrel rest. The finish is dry and lightly bitter, with caramel touches recalling six months in wood. It does not seek the complexity of a Montilla PX nor the intense herbaceousness of a Mallorcan white: its charm lies in the frankness of Leonese apple dialoguing with classic botanicals. A semisweet profile that surprises those expecting conventional vermouth and seduces those who value singular-origin products.

How to serve it

The brand recommends drinking it traditionally or neat, very cold, as aperitivo or light digestivo after a meal. It works excellently with ice and a citrus peel — orange or lemon — reinforcing the Reineta note without masking the herbs. At fridge temperature, 6–8 °C, it keeps the freshness that defines its character. Pairs with mountain cheeses, nuts, Leonese empanadas or simple charcuterie and bread. It can also be served in a small glass, without ice, to better appreciate the dry, bitter finish from barrel rest. Once opened, refrigerate to preserve flavour and quality. The 25 cl format is ideal for trial; 75 cl for sharing at an informal sobremesa. Not a vermouth for Negroni or complex cocktails: it shines in simplicity, as a mountain León afternoon aperitivo.

Herminio Carral remains at the helm with support from children and grandchildren in season; the vermouth arose as a joint project with his wife during the pandemic and has been on the market for more than four years. No other vermouth styles in the range: only Verminio in 75 and 25 cl, 15% vol. A product proving Spanish vermouth is not limited to wine.
