Vermut de Puntiró is the organic aromatic aperitivo of Jaume de Puntiró, historic winery in Santa Maria del Camí (DO Binissalem) founded in 1980 by Jaume Calafat i Nadal and run today by his sons Pere and Bernat Calafat i Vich. Pere Calafat —artisan master since the nineties, author of Vinyòvol and collector of more than fifteen herbs and spices he dries manually— conceived this vermouth as natural extension of the ecological viticulture the house has practised since the early nineties. Marketed under the «Vermut de Mallorca» designation, it starts from Mallorcan grapes — Premsal Blanc, Manto Negro and Callet — from Es Tancat de Son Bieló vineyard on Call Vermell soil, with three-week spontaneous fermentation, prolonged herb maceration and addition of organic must and alcohol. Unfiltered, clarified with bentonite, 17% vol. Facilities in a former agricultural warehouse on Plaça Nova, with winemaking tradition in Santa Maria dating to the 13th century. Island vermouth, not import.

Nose and palate

Intense herbal and balsamic bouquet from prolonged maceration with more than fifteen hand-gathered and dried botanicals. On the nose, layers of Mediterranean herbs, flowers and spices evolving in glass with temperature. On the palate, balance between Mallorcan base wine freshness — Premsal, Manto Negro and Callet in organic blend — integrated botanical bitterness and floral notes softening the whole. Three-week spontaneous fermentation brings live texture and artisan character. Semidry profile: neither Florum sweetness nor Italian dry austerity. Medium-long passage, 17% vol. with presence without aggression. Unfiltered character shows in more honest texture, with possible light haze that does not affect pleasure. A white vermouth that smells of Santa Maria and herbs Pere selects in the tramuntana and the Pla.

How to serve it

Very cold, 8–10 °C, with ice and citrus — lemon or orange — in wide glass or copa balón. Pairs with preserves, Mahón cheese, sobrasada in moderate aperitivo, olives and bread with Mallorcan olive oil. Also works in simple spritz with soda and blood orange slice. The house recommends it as Mediterranean aperitivo, on terrace or after a winery visit — Pere organises cultural events, guided tours and tastings on Plaça Nova. Does not need complex cocktailery: value lies in organic herbal profile. 75 cl format.
