Vermut de solera «BITTER»
Overall impression
Vermut de solera «BITTER» by Jairo Cueto is the bottled aperitif that the owner of La Taberna de Cueto (Calle Casimiro Sainz, 1, Torrelavega) developed from his bar serve and that Bodegas Igarmi bottles in Heras (Cantabria). Per Saskinor, product distributor, it blends house solera vermouth with gin: sophisticated bitterness, gin touch and Cantabrian character. Born at the tavern as one of Jairo's reference vermouths — alongside Cocktail Vermú — before moving to commercial format, in the same line as the lime vermouth cocktail by Jairo Cueto that El Diario Montañés documented as an Igarmi-bottled release. 1 L bottle; also in 25 cl can as Vermut BITTER Los Cántabros in distribution. Distinct from classic Vermut Igarmi Solera (documented separately) and from the winery's Reserva or Cítrico range. For Vermutpedia, «BITTER» documents Cantabrian author vermouth: Torrelavega bar, Igarmi solera base and bitter-gin profile ready to serve.

How to serve it
Very cold, on ice, in a wide glass or low tumbler; designed as a bottled ready-to-drink aperitif per the original La Taberna de Cueto serve. Also sold to take away from the bar and in Cantabrian hospitality. Pairs with fried squid, preserves and the house tapas style.
Production context
Recipe by Jairo Cueto (La Taberna de Cueto, Torrelavega); bottled by Bodegas Igarmi in Heras. Aperitif on Igarmi solera vermouth with gin. 15% vol., 1 L. Bottled sibling of the lime vermouth cocktail by Jairo Cueto in the same Igarmi collaboration. The Cantabrian winery (since 1890) supplies the solera vermouth base and bottling; Jairo contributes the bar formula that popularised Vermú Bitter in Torrelavega. Contains sulphites.
