Vermut Florum Blanco is the pale sibling of the Florum range — «the vermouth of Sevilla» — made entirely by hand in Alcalá de Guadaíra (province of Sevilla). The base is Airén wine, a variety the house considers ideal for vermouth thanks to its structure, acidity and willingness to cede centre stage to the botanicals, macerated with aromatic plants, citrus fruit, flowers and spices and fortified with grape spirit to 15% vol. Declared sweet profile, with the balance of sweetness, freshness and pleasant bitterness that Florum defines as its hallmark. Rigorous quality control on every batch. Key botanicals: wormwood, vanilla, cardamom, orange blossom and fennel. Pair to Florum Rojo in the range. Nose and palate

Bright golden yellow, clean and brilliant in the glass. On the nose, very fresh citrus aromas with mentholated, herbaceous notes of sage and fennel, and floral chamomile. A spiced background of cardamom and vanilla adds aromatic sweetness without cloying. On the palate, a warm, sweet entry followed by an intense palate and good acidity. A enveloping vermouth with generous volume, pleasantly integrated subtle bitter flavours — wormwood — that complete the balance and persistence. Sweet on the label, though Airén acidity keeps it from feeling heavy. Long passage, a finish that invites another sip. Floral botanicals — orange blossom, chamomile — dialogue with citrus and aniseed fennel. An accessible, generous white vermouth for those who prefer sweetness with freshness.

How to serve it

The house recommends serving at 6–8 °C in a wide glass, with ice and a slice of lemon or lime. The classic Andalusian white vermouth format: cold, lightly diluted by ice, with citrus reinforcing Airén's natural acidity. Works at aperitivo with olives, gildas, nuts and semi-cured cheese. Also in a simple highball with soda for a longer, more refreshing profile. It does not need elaborate cocktails: Florum holds its own. Pairs with Sevillian tapas — tortilla, jamón, fried fish in moderation. 75 cl format. Sibling to the Red for alternating or comparing profiles on the same vermouth afternoon.
