Vermut Florum Rojo
Vermutpedia Score: 7.4/10
Overall impression
Vermut Florum Rojo is Florum's red reference, a brand that calls itself «the vermouth of Sevilla» and produces in Alcalá de Guadaíra from Airén base wine and artisan maceration of aromatic plants, citrus, flowers and spices. Wormwood, cinnamon, orange peel, thyme and star anise are the declared key botanicals; the house highlights the balance of sweetness, freshness and pleasant bitterness as the seal of both references. Entirely artisan production with batch quality control, fortified with grape spirit to 15% vol. Sweet profile. It is not a Jerez nor a Montilla vermouth: it is aromatised Sevillian Airén, with the honesty of a small Andalusian producer against the big brands. Intense mahogany colour with orange hints and good depth, a sign of preserved acidity. Neighbourhood vermouth with terrace and tapas ambitions, without complications. Pair to Florum Blanco.
Nose and palate
Visually, intense mahogany with orange hints, good depth and shine. On the nose, a complex aroma with botanical balance: citrus, liquorice and cinnamon stand out, with a delicate touch of ageing and intense aromatic persistence. On the palate, a balanced entry that begins sweet, turns bitter and returns the nose aromas — aromatic herbs, spices and flowers. Intense passage with a long, persistent finish that invites continued drinking. Sweet on the label; wormwood's bitter turn avoids cloying. Broad texture, well-integrated 15% vol. Orange peel and star anise add freshness and acidic nuance; cinnamon and thyme bring spiced warmth. A direct Andalusian red vermouth, without flor nor PX, that defends Airén as a legitimate base for Spanish vermouth.
How to serve it
Recommended service at 8–10 °C in a wide glass, with ice and a slice of orange — the garnish that reinforces the main citrus botanical. Classic aperitivo with olives, jamón, cheese and nuts. Also in a balloon glass to better appreciate aromatic evolution. Works in simple combinations — soda, citrus — but shines in traditional Sevillian vermouth service. Not the typical Negroni profile, though it can be experimented with in sweeter builds. Pairs with Andalusian tapas and conservas. 75 cl format. Alternating with Florum Blanco in a comparative tasting is the best way to understand the house philosophy: same Airén, different botany.
Production context
Artisan production in Alcalá de Guadaíra (Sevilla): Airén wine → maceration of wormwood, cinnamon, orange peel, thyme, star anise and the rest of the formula → fortification with grape spirit → batch quality control → bottling at 15% vol., 75 cl. Florum describes the full process at vermutflorum.com: Airén cedes the spotlight to botanical aromas thanks to its structure and acidity. Two-reference range — Red and White. «The vermouth of Sevilla» as territorial claim. An accessible reference for artisan Andalusian vermouth, far from the great Jerez bodegas but with its own identity and coherence in every bottle.
