Overall impression

Zarro Blanco is the clear expression of classic Madrid vermouth that Bodegas Sanviver has made in Fuenlabrada since 1968 under the motto 'vivir Zarro, sentir Madrid'. According to the bodega's official documentation and its distributors, the Zarro range combines selected Madrid wines with botanical maceration in oak barrels, delivering artisanal character at industrial scale —four thousand square metres of facilities and capacity above five million litres a year— without losing the soul of the taberna. The white offers a fresher, friendlier profile than the brand's red: semisweet, accessible and built for a bright aperitivo. 15% vol., 75 cl. For Vermutpedia, Zarro Blanco is Madrid barrique vermouth in a clear register: citrus, cinnamon and vanilla over an herbal background, roundness on the palate and moderate bitterness. Distinct from Zarro Reserva or Gran Reserva for less time in wood and a more direct terrace-and-bar vocation, consistent with the brand's export to more than twenty countries.

Nose and palate

Commercial and house sheets describe a white vermouth with dominant citrus, cinnamon and vanilla notes from botanical maceration in oak. On the nose, lemon, orange, sweet spices and a soft herbal background emerge; the barrel adds roundness without cloying density. On the palate it is round, with moderate bitterness and a spiced finish that balances the semisweet register —less sweetness than classic red Zarro, more freshness and lightness. Silky texture, contained persistence with vanilla and citrus memory, integrated acidity that keeps drinkability. Compared with industrial white vermouths without wood ageing, Zarro Blanco adds cinnamon and oak layers from the American-barrel maceration the bodega uses across the range. A white for palates seeking accessible Madrid vermouth, a semisweet profile and castizo botany without the balsamic depth of the Reserva tier. Coherent with Bodegas Sanviver as the vermouth reference of the Community of Madrid.

How to serve it

Zarro Blanco is meant to be served very cold, with ice and lemon or orange peel —a format that enhances the citrus and freshness of the semisweet profile. Ideal for Madrid terrace aperitivo, mid-morning or lunchtime when a lighter white is preferred to the brand's red. In a balloon glass or wide tumbler; moderate ice so as not to dilute the vanilla and cinnamon. Pairs with olives, gildas, pickles and light castizo appetisers. Also works in white spritz or soda combinations when Madrid barrique vermouth is wanted. For tasting, a cocktail glass without ice lets you appreciate the roundness and moderate bitterness. It does not compete with premium long-aged white vermouths: it is Zarro in clear, direct, recognisable register. Coherent with a range that includes red, reserva, gran reserva, organic and Especial Taberna from Bodegas Sanviver in Fuenlabrada.
