Vermut Zarro Reserva Rojo is Bodegas Sanviver's superior tier within the house's classic castizo style, made in Fuenlabrada (Madrid) since 1968 —'vivir Zarro, sentir Madrid'—. According to official distribution, it combines aromatic herbs and botanicals with eight months' rest in oak barrels, adding complexity and depth against standard Zarro Rojo. Bodegas Sanviver, with 4,000 m² and capacity above five million litres a year, is the sole bodega in the Community of Madrid at this vermouth, sangría and liqueur scale; it exports to more than twenty countries while keeping the soul of the Madrid taberna. Nose and palate

Commercial sheets and Peñín describe mahogany colour, floral, balsamic aroma with wild herbs and ripe fruit; on the palate balanced, complex and balsamic. On the palate it is broad, balanced and persistent; eight months in oak add toasted layers and candied-fruit notes that distinguish Reserva from young Zarro. Semisweet sweetness stays integrated with moderate bitterness and long finish. Compared with Catalan or Riojan barrique vermouths, Zarro Reserva keeps castizo Madrid profile: dried herbs, ripe fruit and wood without excess density. A vermouth for palates seeking greater depth without abandoning bar tradition.

How to serve it

Zarro Reserva is meant to be enjoyed alone with ice and an orange slice, a format that enhances citrus and barrel wood. Also works as a base for serious-profile cocktails —Negroni, Manhattan— when greater Madrid complexity is wanted. The house recommends it for toasting and sharing on special occasions, not only quick terrace aperitivo. Serve very cold, between 6 and 8 °C, in a low glass or wide tumbler; the 1 L format suits domestic table service. Pairs with ibéricos, cured cheeses and conservas. For tasting, a cocktail glass without ice lets you appreciate balsamic persistence. It does not replace taberna tap Zarro: it is its more refined, barricaded version for those who already know the brand.
