Blending / assemblage

Blending is the stage where base wine, botanical extracts, alcohol, sugar and any ageing components are combined until the final balance of the recipe is reached.

After maceration or infusion, the producer doses each component. Here the weight of wormwood, sweetness and bitter length are decided.

Good blending keeps the base wine readable without sugar masking the botanicals. It is the moment when the formula stops being a sum of ingredients and becomes a style.
