Bordiga Vermouth Superiore Biologico

Overall impression

Vermutpedia is re-evaluating the Italian catalogue; the Vermutpedia Score for this entry remains pending until the next tasting round. Bordiga's Vermouth di Torino Superiore IGP Biologico represents the organic summit of the Cuneo distillery's vermouth range, staying faithful to the original recipe while selecting certified organic ingredients: white-vinified Barbera as the base wine, organic alcohol, organic cane sugar and fifty-six Alpine botanicals gathered by hand — inherently organic — among which Roman wormwood and gentian stand out, alongside exotic spices and mountain herbs from the Cuneo Alps. Certified by an authorised control body and protected under the Vermouth di Torino IGP denomination, it combines Superiore discipline with the traceability of Piedmont organic viticulture. Brilliant ruby colour and forty to fifty days of production before bottling — followed by cellar rest in Bordiga's caves at around ten degrees — follow the house's artisan procedure: natural cold filtration through paper filters, without aggressive clarifiers. A new addition to the range that places Bordiga at the forefront of author vermouth bio without renouncing the century-old legacy of the Monregalese.

Nose and palate

In the glass it shows a brilliant, intense and clean ruby that anticipates the aromatic richness of the fifty-six botanicals. Official organoleptic notes describe sweet and bitter orange peel, ginger, sage and yarrow as the main support, with Bourbon vanilla rounding and softening the sip without losing balance. On the nose the whole is spiced and complex: candied citrus, mountain herbs, soft resins and a vinous halo from the white Barbera that brings acidic freshness. On the palate a bitter finish dominates where Roman wormwood and gentian — the load-bearing pillars of any respectable vermouth — rest on earthy gentian and vibrant quassia. Bourbon vanilla softens the opening with complex but restrained sweetness; the bitter finish is long, elegant and very Piedmontese. Medium-high texture, notable persistence. At eighteen degrees alcohol it has enough body for high-level Negroni and Americano, but also shines in the glass for anyone seeking an organic Superiore with Alpine soul.

How to serve it

Bordiga recommends a serving temperature of 10–12 °C and suggests pairing with dark chocolate, whose bitterness dialogues with gentian and quassia. In cocktails it excels in the Bordiga Cup — five centilitres of Superiore Biologico, soda or artisan lemonade, seasonal fresh fruit and Bordiga lemon tincture — or in a classic Americano with red bitter and soda. It also works in Negroni, Boulevardier or served alone over ice with an orange twist in a tumbler. For its organic and botanical profile, it appeals to bars with sustainable aperitivo menus and to drinkers who prioritise certified organic ingredients without sacrificing complexity. Avoid mixing with very sweet tonics that compete with the vanilla and cane sugar; neutral soda or direct consumption is preferable. 75 cl bottle, standard format of the Superiore IGP Biologico range in the official bordiga1888.it shop.

Production context

Distilleria Bordiga in Cuneo (Piedmont) has produced vermouth, gin and amari since 1888 with Alpine botanicals gathered by local mountaineers. The Superiore IGP Biologico uses white-vinified Barbera, organic alcohol, organic cane sugar and infusions of fifty-six botanicals — herbs, peels, berries and flowers — with wormwood as the bitter axis. The traditional process contemplates forty to fifty days of production, rest in caves at a constant temperature of around ten degrees for fifteen or twenty days and exclusively natural filtration. Eighteen degrees alcohol, 75 cl, IGP Vermouth di Torino certification and organic certification. Part of the Consorzio di Tutela alongside the Rosso, Bianco, Extra Dry and Excelsior from the same house. For the drinker seeking author Torinese vermouth with ecological conscience, this Superiore Biologico is the most ambitious expression of Bordiga's rosso catalogue below the Excelsior aged with Barolo: brilliant ruby, fifty-six botanicals and artisan patience.
