Overall impression

Cabecita Loca White Reserve is the second vermouth reference from Victor Clavería (Barbastro, Huesca), Artesano Alimentario de Aragón since 2016. It starts from oxidatively aged white wine — not young like Premium Rojo —, headed with vinous alcohol and sweetened with grape must instead of sugar. Maceration of more than twenty natural extracts; unclarified, unstabilised and unfiltered.

Nose and palate

Orange and gold colour. Aromas of complex intensity: chamomile, anise, quince, dried fruit and honey. Elegant palate wrapped in curry, hazelnut, fennel and jasmine; long and deep, with fine, persistent bitters and sweets.

How to serve it

Between 8 and 10 °C. Pairs with seafood, fish, cheeses, ibérico ham or salmorejo; the anchovy toast with salmorejo is the house reference pairing.

Production context

Made in Barbastro (Cinca Valley). 17% vol., 75 cl, Vinolok closure. Gold medal African International Wine and Spirits Competition 2020. Sibling to Premium Red Vermouth (IWC Gold 95 pts 2022).
