Dolç de Giró Cavall de Foc

Celler La Muntanya

Muro de Alcoy , España

Overall impression

Dolç de Giró Cavall de Foc is, per Celler La Muntanya's official technical sheet, a **red liqueur wine** — not a vermouth — under the Cavall de Foc brand (Muro de Alcoy, Alicante). The bottle confirms this with «Vi de Minifundio» (versus «Vermut de Minifundio» on the three vermouths of the same range). Giró grape; production zone Comtat, Alcoià and Vall d'Albaida; 15% vol. Official process: partial fermentation for aromas and colour, with good varietal acidity, then liqueur-wine method to a fresh sweet wine. Sold in the same Cavall de Foc commercial family as the vermouths. For Vermutpedia, it is the house's Giró sweet: minifundio liqueur wine, brand sibling of Rojo/Blanco/Naranja Amarga vermouth.

Nose and palate

Pending evaluation.

How to serve it

Between 8 and 12 °C, chilled, per official technical sheet. Ideal with unctuous sweet desserts, creams, puff pastry and local sweets (almoixàvenes, arnadí, sweet-potato pastries, anise rolls), or neat.

Production context

Celler La Muntanya (Setla de Nunyes – Muro de Alcoy). Red liqueur wine 100% Giró; partial fermentation + liqueur-wine method; 15% vol.; 75 cl (also 100 cc miniature). Cavall de Foc range: three vermouths and two liqueur wines (Dolç de Giró, Dolç de Moscatell). Purchase at cellerlamuntanya.com.
