Vermut Manuel Aragón is the sole vermouth reference of Bodega Manuel Aragón in Chiclana de la Frontera (Marco de Jerez). One hundred per cent artisan production that dispenses with industrialisation to recover the spirit of hypocratic wine: a base of exceptional house wines — Palomino and Pedro Ximénez — macerated with wormwood, gentian, orange peel, spices and aromatic plants, with ageing in old Amontillado butts. At 15% vol. in a 75 cl bottle, with formats also available in 3, 5 and 10-litre boxes, it is the Chiclana answer to Jerez vermouth: generous, solera-aged and unmistakably Andalusian. For Vermutpedia, it represents artisanal Cádiz red vermouth with bodega depth rather than supermarket sweetness.

Nose and palate

Dark mahogany colour with copper hints. Fragrant nose: cinnamon, thyme, vanilla, orange peel and ripe fruit. On the palate it differs from conventional vermouths: sweetish, voluminous, balanced acidity and a very pleasant passage. The solera influence from old Amontillado casks adds oxidative warmth and Jerez identity without overwhelming the botanical maceration. Texture is round and enveloping, with semisweet balance that invites long aperitivo sessions rather than quick cocktail dashes.

How to serve it

Serve at 6–8 °C in a wide glass with ice and a slice of orange. Pairs with appetisers, olives, mussels, clams, smoked fish and sea preserves — the natural companions of a Chiclana bodega vermouth. Also works in Americano or Negroni when a sweeter, more Jerez-style red is sought than a standard Torino. For Vermutpedia, Manuel Aragón is best enjoyed as a cold aperitivo that showcases solera depth and Andalusian spice.
