El Molar

Overall impression

Dabuti is the artisan vermouth of Bodega Tinta Castiza in El Molar (Sierra Norte de Madrid). Base wine grapes come from the municipal district, in parcels between 750 and 800 metres on granite soils, with vineyards of 40 to 65 years. Blend of 70% Malvar and 30% Albillo Real, Blanca Jaén and Pardilla; maceration with more than 38 botanicals and sweetened with panela cane sugar according to the winery. Bacchus Gold Medal 2023 and M de Producto Certificado de Madrid seal.

How to serve it

Between 8 and 10 °C with ice and citrus peel. Pairs with olives, soft cheeses and ibérico charcuterie from the Madrid sierra.

Production context

Artisan production at the El Molar bodega. 15% vol., 75 cl bottle. Premium is the commercial name of the same product; no other vermouth modality exists in the Tinta Castiza catalogue, which completes its offer with Molaracha and Tinta Castiza red and white wines.
