Juan de Cabriada is the artisan vermouth of Bodega Vildé in Vildé (Soria), a homage to the reformist physician Juan de Cabriada—physician to Charles II, author of medical treatises and, curiously, born in Vildé. According to bodegavilde.com, the project began in May 2018 when the winery's winemaker tasted an outside vermouth and set out to replicate it through trial and error; their particular formula has been sold since July 2020. Made from local white wine macerated with vermouth herbs, sugar, grape spirit and natural colour from arrope (reduced must), without added sulphites or artificial colourants. A 50 cl bottle at fifteen percent alcohol, it is the sole vermouth reference of this Sorian winery and represents the most personal Castilian-Leonese vermouth on the map: traditional herbs, arrope sweetness and historical character.

How to serve it
Juan de Cabriada works cold, neat or on ice as a Sorian aperitif where its artisan character and arrope sweetness speak clearly. At 6–8 °C in a small glass or short tumbler with ice, the herbs and natural arrope colour need no elaborate garnish. It also suits simple cocktails that respect its personality: a light Americano, a soft vermouth tonic or short drinks where sulphite-free vermouth with arrope adds originality. This is not a high-volume bar vermouth but a 50 cl bottle to discover Bodega Vildé alongside its wines and the later Fuegus herbal wine from the same house. Pair with local cheeses, Sorian charcuterie and Castilian appetisers.

Bodega Vildé makes Juan de Cabriada in Vildé (Soria) from local white wine, vermouth herb maceration, sugar, grape spirit and arrope colouring. No sulphites or artificial colourants according to bodegavilde.com. Commercialised since July 2020 after development begun in May 2018. Fifteen percent alcohol, 50 cl bottle. Sole vermouth in the winery catalogue; the house later launched Fuegus herbal wine using a similar herbal maceration on white wine. The name honours Juan de Cabriada, the distinguished physician born in Vildé. For Vermutpedia it is the benchmark artisan Sorian vermouth: arrope, no sulphites, traditional herbal profile and verifiable origin on the official Bodega Vildé website.
