Vermut La Dolores is the vermouth reference in the homonymous collection that Bodegas Agustín Cubero relaunched in 2021 after acquiring a Bilbilitan anise and liqueur brand with more than two hundred years of history. The recovered formula dates from 1908, when Ramón Esteve Dalmases's liqueur factory launched its Torino-style vermouth; today the family winery in Godojos (Calatayud), founded in 1881 and now led by Jesús Javier Cubero Enguita, makes it. The product pays homage to María de los Dolores Peinador Narvión —the Calatayud woman who inspired José Felíu y Codina's zarzuela «La Dolores»— and is marketed under the slogan «Pregunta por mí, si te atreves». Garnacha base from clay-gravel soils around Calatayud; home-style botanical maceration in demijohns in sun and open air; two months in barrel. 15% vol., 75 cl, swing-top cap and diamond label «Desde 1819». Guía Peñín: 92 points. Forms an aperitif trio with the semisweet white, old-vine red, bicentenary Garnacha and a brut nature cava from the same collection. Nose and palate

Intense mahogany red. Powerful nose with citrus and botanical touches; Mediterranean and alpine aromas, delicate sweetness and singular bitterness; dried fruit and spice rise from artisan maceration in demijohns. On the palate a warm, enveloping entry, high intensity, medium acidity and medium body; the palate refreshes with gentle bitterness that melts into a sweet, amiable sensation. Balance between sweetness and bitterness according to the brand's commercial sheet.

How to serve it

Very cold over ice in a wide-mouthed glass with orange slice, olive and soda siphon. Ideal with gildas, anchovies, preserves, seasoned olives or sheep's milk cheeses from the Calatayud area.
