Vermut Blanco La Paloma
Overall impression
Vermut Blanco La Paloma completes the bottled range of the historic Oviedo venue alongside the red solera and the manchado. Carmen García explains in Asturian press that, besides the well-known Solera vermouth, La Paloma has long offered Blanco and Manchado as evolution without forgetting its roots. House-made production distributed in bottle to bars and shops across the Principality. For Vermutpedia, the white documents the bright side of the La Paloma trio: wine-based aromatised vermouth, not cider or liqueur.
Nose and palate
Pending evaluation.
How to serve it
Cold aperitivo in wide glass; ideal on terrace or as a lighter alternative to the red solera. Works with boiled shellfish, goat cheese and Asturian preserves. Temperature 6–10 °C; in summer ice is acceptable in moderation for refreshment without losing botanicals.
Production context
Cafetería La Paloma (Oviedo) produces and distributes the white in bottle; retail documented in Asturian distribution. Forms a trio with Solera 1900 and Manchado. For Vermutpedia, Vermut Blanco La Paloma is an independent bottled Oviedo reference, separate from La Vizcaína white (Las Caldas) or Monasterio de Corias (Cangas).
