Martín Faixó Perafita Vermuth
Overall impression
Vermut MF (Perafita) is the author vermouth of Martín Faixó in Cadaqués: fortified and aromatised wines with botanicals from Cap de Creus Natural Park, integrated during fourteen months in French oak barrels. High Empordà reference, highly gastronomic — where slate vineyard Garnacha, Merlot and Muscat of Alexandria meet wild coastal herbs in a semisweet profile built for food as much as for the aperitif.
Nose and palate
Mahogany colour from barrel maceration. Cinnamon, mint, cardamom, thyme and sesame on the nose; on the palate lemon citrus, orange peel and balsamic notes. Medium sweetness, good balance and final bitterness that adds depth. Fourteen months in French oak weave botanicals from the Cap de Creus park into a cohesive, gastronomic whole — spiced, herbal and citrus in equal measure, with Empordà slate-mineral undertone from the Garnacha-Merlot-Moscatel base.
How to serve it
With cockles, anchovies and olives; Martini, Negroni or pairing with spiced dishes according to the celler. Serve cold in a copita or wide glass; the gastronomic profile rewards food pairing — shellfish, conservas, spiced tapas — as much as classic cocktail use where French oak and Cap de Creus botanicals should read clearly.
