Overall impression

Vermut Rojo Pin Up starts from Rioja white wine (Macabeo and Malvasía) for its fruity character, according to the official tipicodeburgos.com sheet. Natural Tempranillo must from Rioja Alavesa is added — must only, without skin maceration — to preserve fruit without excessive colouring. No refined sugars: entirely natural sweetness. Made in Medina de Pomar (Burgos), 750 ml.

Nose and palate

Maceration with original botanicals, no artificial aromatic essences. Wormwood, centaury, elecampane, tansy and centaurea add volume; cinnamon, coriander, cardamom, thyme, vanilla, elderflower, cherry and orange peel reinforce the fruity character. Rest in open wooden vat during maceration before fortification; slow maturation without excess wood to avoid oxidising or turning rancid the fruity component.

How to serve it

Cold with ice and orange, as a Burgos aperitif. Castizo profile balanced between natural sweetness and herbal bitterness, designed to preserve fruit over woody load.

Production context

15% vol., 75 cl. Fortified with neutral wine alcohol after maceration in base wine and alcohol. Single-reference range. Artisan process documented at tipicodeburgos.com/producto/vermut-pin-up/.
