Povarelo Blanco
Vermutpedia Score: 7.7/10
Overall impression
Povarelo Blanco revives in O Carballiño (Ourense) the recipe the Paniagua family has kept for more than eighty years, made at Destilerías Miño. Base of selected Galician wines, fourteen weeks in oak barrel, eighteen botanicals macerated separately — lemon verbena, gentian, elderflower and balsamic eucalyptus among the most notable — and one hundred days' bottle rest. Atlantic sibling of the red; Galician white vermouth of body and character.
Nose and palate
Straw yellow with golden reflections, brilliant. Floral, citrus and herbaceous nose, with apple and subtle mineral background. Light, refreshing palate; the finish is markedly bitter, where aromatic herbs of Galician soil dominate.
How to serve it
In a wide glass or tumbler with ice to taste and lemon or lime twist to add citrus aroma. Ideal as a cold aperitif showing the semidry balance and Atlantic bitterness of the Povarelo style.
Production context
Made at Destilerías Miño, O Carballiño. 15% vol., 1 L format. Two-reference range: Blanco and Rojo. Individual maceration of the 18 botanicals — among them orange blossom, cardamom, loureiro, chamomile, lemon balm and rosemary — structures a unique profile according to the official website.
