St. Petroni Blanco is, according to Vermutería de Galicia, the only vermouth in the world made entirely from albariño of Pazo de Arretén (D.O. Rías Baixas, Ulla subzone, Padrón). Petroni — the Latin name for Padrón — was born in 2014 as a deeply vinous vermouth: vinification on lees and maceration with twenty-eight Galician botanicals, including Herbón-Padrón pepper with D.O.P. For Vermutpedia, it is Atlantic white vermouth with rare varietal identity: albariño acidity and mineral salinity meet coastal botanicals in a format that privileges wine structure over anonymous sweetness.
