St. Petroni Vermello is the 100% albariño red vermouth from Vermutería de Galicia, founded in 2014 in Padrón by partners linked to Pazo de Arretén (D.O. Rías Baixas, Ulla subzone). Petroni is the Latin name for Padrón; the grape comes from estate vineyards where the Atlantic valley lends exclusive acidity to albariño. It is, in the house's words, the only vermouth in the world made entirely from this variety on lees. Nose and palate
Dark red with copper glints — the colour of hibiscus flower, a botanical used alongside conventional caramel. Nose of ripe fruit, vanilla and delicate pastry. On the palate fresh, broad and elegant entry; Galician acidity balances sweetness and bitterness with great volume and intense, slightly luscious and bitter finish. At 15% vol. the wine backbone remains audible through 29-botanical maceration — wormwood, bay, lemon verbena, mint, melissa, chamomile, sage, citrus — using pure spirits distilled from albariño. How to serve it
