Overall impression

Ventura 27 is the aged artisan vermouth from Bodegas Dimobe (Moclinejo, Málaga), made from Muscat of Alexandria from the Axarquía and Pedro Ximénez from the Montes de Málaga on decomposing slate. Per the technical sheet and winery, base wines aged three to five years before blending; after slow maceration with botanical herbs and spices per the original formula, it rests one more year in a 3,000-litre centenary American oak vat where brandy holandas aged for over eighty years. Iodine tones with amber edges; cinnamon and orange peel; bittersweet, fresh and amiable on the palate. Gold Premios Mezquita 2024, 2022 and 2020; silver 2018. 15% vol., 75 cl.

Nose and palate

Intense, luminous topaz with amber edges and more marked oxidative evolution than the entry-level Dimobe. Broad, spiced nose: cinnamon, candied orange, clove, liquorice and subtle dried-fruit notes integrated with the Muscat-PX blend; the year in the centenary vat adds gentle vanilla and a discreet balsamic undertone. Structured, round palate, restrained sweetness and well-dosed herbal bitterness; freshness cuts through the density of the aged base wine and leaves a long, warm finish lightly smoked by the historic wood.

How to serve it

Serve between 6 and 8 °C, very cold with ice and orange slice to highlight the spiced profile's citrus peel. Axarquía terrace format and slow aperitivo; also in cocktails when vermouth with long ageing is wanted. Pairs with olives, preserves, cured cheeses and Málaga tapas. Balloon glass or wide tumbler; centenary wood adds roundness best not over-diluted.

Bodegas Dimobe makes Ventura 27 in Moclinejo (Axarquía): selected grapes, slow cellar maceration and blending per original recipe. Winery process: Muscat and Pedro Ximénez wines aged three to five years → blending and botanical maceration → twelve months in 3,000-litre centenary American oak vat, previously used for brandy holandas. 15% vol., 75 cl.
