Vermut Dimobe is the reference vermouth from Bodegas Dimobe (Antonio Muñoz Cabrera, Moclinejo, Málaga), made from Muscat of Alexandria from the Axarquía and Pedro Ximénez from the Montes de Málaga on decomposing slate soils. Per the technical sheet and winery, it starts from a selection of the best wines of both varieties —previously aged two to three years—, blended and macerated with chosen aromatic herbs. Iodine tones with amber edges, bright; spicy notes; amiable and fresh on the palate. Gold Premios Mezquita 2021, bronze 2019. 15% vol., 75 cl.

Nose and palate

Bright amber with copper glints and the iodine nuance typical of mature Málaga wines. The nose blends muscat blossom, candied raisins and dried herbs over a mineral slate Axarquía backdrop; clove and citrus peel dominate on a raisined grape base. Amiable, semisweet entry with good volume; Muscat brings peach and fine honey while PX rounds and extends a clean herbal-bitter finish, without wood heaviness.

How to serve it

Serve between 6 and 8 °C, very cold with ice and orange slice — official recommendation. Ideal as aperitivo and in cocktails to taste; the Muscat-PX blend tolerates spritz with soda or tonic in Axarquía summer. Pairs with olives, preserves and Málaga tapas. In balloon glass or low tumbler; low temperature contains sweetness and enhances spices and iodine notes.

Bodegas Dimobe (San Bartolomé 5, Moclinejo, Málaga) makes the vermouth from Muscat of Alexandria and Pedro Ximénez wines from own vineyards in Axarquía and Montes de Málaga. Wines rest two to three years before blending and botanical maceration; the technical sheet describes light pre-blend ageing, with no further wood ageing of the finished vermouth. 15% vol., 75 cl.
