Overall impression

Vermouth Casalobos is a premium mountain vermouth from Finca Casalobos in the Montes de Toledo: a blend of estate white wines macerated for several months in oak barrels with herbs gathered at altitude — rosemary, lavender and dried citrus — plus orange peel. Inspired by old mountain recipes, with floral character, balsamic entry and a long, fruity finish. Fortified with ethyl alcohol and balanced with cane sugar and caramel.

How to serve it

With aged and goat’s cheeses, anchovies, Iberian charcuterie, dressed olives and toasted nuts; also with sautéed mushrooms and dishes with mountain herbs.
